On Saturday evenings after the rugby my dad will put a whole rack of lamb ribs into the oven and we would have that with pap. Nowadays I like to keep things a little more healthy and cook French-trimmed lamb ribs with a bit of potatoes and an awesome pistachio pesto.
So I have a few things in the fridge that is nearing their expiration date. And, as the quote above suggests, I really hate waste. I had to come up with a way to use up the ingredients before they really do expire and so the Beetroot and Goat’s Cheese Quiche is born.
Ever since I can remember my mum would always ensure that, when in season, we have beetroot salad on the table.
When I grew up, the family would gather on a Sunday for lunch. Everyone will be responsible for bringing one salad and one meat dish so it almost always resulted in someone bringing some form of jelly salad. My most favourite one is the Avocado Jelly Salad.
In South Africa we bought avocados by the case. It is for that reason that I love making this recipe.
