Ultimate Cobb Salad

My hubby loves a good burger. For this reason, whenever we’re out and about and there is a Byron nearby, we have to pop in for a meal.
I’m not such a big fan of burgers (especially when they put in the dreaded Worcestershire Sauce in the meat and makes me ill!) so I always opt for my favourite when we’re out: the Cobb Salad. As of late Byron has changed its menu and the Cobb Salad sadly is no longer available, however, it has become a firm favourite in our household as I try to recreate this wonderfully filling salad each week. Literally anything goes, so if there is something in the recipe list you are not too keen on, simply replace or omit it to suit your tastebuds.
Ultimate Cobb Salad

A fresh, light salad recipe perfect for a late summer dinner.
Ingredients
- Enough lettuce for 2 people, I like Baby Gem lettuce
- 1 handful of cherry tomatoes
- 8 rashers of bacon
- 2 chicken breasts, cooked with spices to your liking
- 2 boiled eggs, boiled to your liking
- 1 avocado, cut into slices
- 60g blue or goats cheese
- 1 cup chopped cucumber
- 3 spring onions, chopped
- 1 carrot, julienned
- 8 olives
- handful of croutons
Directions
- Arrange all salad ingredients on two plates.
- Squeeze over a touch of lemon juice.
- Finish off with a sprinkling of salt and pepper.
