An ordinary life with a dusting of luxury.
Summer time is salad time. The fresher the better!
There is very little things in life that can be more satisfying than feeling the crunch of fresh vegetables between your teeth. Especially when you know it is healthy!
200 grams | Trimmed green beans |
1 small | Red onion |
2 tablespoons | Balsamic vinegar |
1 teaspoon | Red wine vinegar |
2 tablespoons | Extra virgin olive oil |
1 tablespoon | Crushed walnuts |
Pinch | Sea salt |
Pinch | Freshly ground black pepper |
Blanch the green beans in salted hot water (dip it into boiling water and leave for about a minute or two before removing and plunging into cold water to stop the cooking process).
Cut the onion into very thin rings before dressing it in the vinegars, oil, salt and pepper.
Mix the cooled beans with the onions and plate up.
Sprinkle over the walnuts and serve.

This looks really good! However I’m not a walnut fan. Would it be okay to leave them out?

Definitely! You can substitute it with pangrattato (Italian breadcrumbs) if you want to add some crunch.

Thanks for the reply. Is it weird that I don’t like my salad to crunch lol. I’m not much of a crouton person. Haha.

Omg! When I see it at a potluck I just want to scream! It’s a literal abomination lol. Mac and cheese should not have a crunch!
