Baked beans and poached eggs

I am a firm believer of many things.  One of those are that one should never settle for ordinary.  Always do that little bit extra to make the ordinary, well, extraordinary!

A little background…

Take breakfast, for example.  With the very warm weather we’re currently enjoying our bread has gone mouldy within a day of purchasing.  (Normally, with warm weather, I put my bread in the fridge, but this time there was no space!)  With bread out of action, breakfast choices became rather slim this morning.  I don’t eat cereal as I don’t see the point and, truth be told, I don’t do breakfast unless I’m on holiday.

Getting to the point…

With a bit of luck, I found a tin of baked beans along with two nearly expired eggs.  Breakfast sorted!  I like jazzing things up and this morning will be no exception.  So instead of ordinary beans and eggs, I like taking things just that one step further.

So here’s what I did:

  • Baked beans heated on the hob with a sprinkle of garlic and a teaspoon of tomato paste to deepen the flavour.
  • I then poached two eggs (see my recipe here: Perfectly poached egg) before plating the whole lot up.  Lastly a twist of pepper and a few basil leaves and breakfast is truly served in style.

Don’t lead an ordinary life if you can add that little touch of magic to make it extraordinary; go on, you deserve it!

    • Iโ€™m so glad someone else feels the same way ๐Ÿ˜Š. Iโ€™ve never been a big breakfast eater, but I find having fruit and yoghurt or just plain yoghurt drizzled with honey and cinnamon is really nice during the summer.x
