Super Easy Refried Beans

I love refried beans, but the stuff you get in the tin taste, well, tinny… With this recipe you not only take out the over processed flavour of the tinned refried beans, but it will also taste as if you have spent hours making this!

Super Easy Refried Beans

  • Servings: 2
  • Difficulty: easy

Ingredients

  • 1 tin of pinto beans, drained but liquid reserved
  • 4 rashers of bacon, finely diced
  • 1 teaspoon of smoked paprika
  • 1 small onion, finely diced
  • 1 tablespoon of sour cream
  • salt and pepper to taste

Directions

  1. Fry the bacon and onion in a sauce pan.
  2. Add the beans and paprika and stir gently until warmed through.
  3. Take off the heat and mash lightly with a potato masher or fork. Add a touch of boiling water or the reserved liquid if it is too dry. Season with salt and pepper.
  4. Serve with a dollop of sour cream.
