Watermelon, feta and mint salad

With summer time I’m always on the prowl for something that is light, but tasty at the same time. With an abundance of mint in our garden it is inevitable that I have to incorporate it into my cooking.

I miss the huge watermelons we get in South Africa during the summer months.  When I was little I couldn’t lift one by myself and did it take two of us to carry one watermelon.  Here in the UK I’m lucky just to find a watermelon that is as big as a small football!

Nevertheless, this simple salad is still a highlight on our summer table, especially when we have a BBQ.

I’m not going to give quantities, as you would adjust it to suit your party.

Ingredients

Watermelon, cubed

Feta cheese, cubed

Mint leaves, chopped

Salt and pepper to taste

Method

  1. Combine the watermelon and feta cheese.
  2. Season very lightly just to bring out the sweetness of the watermelon and the saltiness of the feta.
  3. Sprinkle over the chopped mint leaves and refrigerate.
  4. Serve ice cold as a salad at a barbeque with a glass of prosecco.

  4. Okay so this sounds like a strange combination for me, but actually looks yummy! I have never tried feta cheese before (that I know of anyway 😂) I might try this out. I like watermelon and like mint in my drinks! Thank you for sharing xx
